A high-diastatic-power base malt built for the still — maximum enzyme package, clean grain character.

This is the same Arizona-grown, gently under-modified base as our Bohemian Mesa — selected and sold for distilling. Its exceptional enzyme load (174 °Lintner / 593 °WK) converts big adjunct and high-gravity mash bills on its own, so it does the heavy lifting in bourbon, whiskey, and craft-spirit mash bills.
