Our Malts
Each malt is produced on our Kaspar Schulz 10-ton automated system on the farm in Queen Creek, with full lot traceability from grain receipt through finished bag. A Certificate of Analysis is provided with every batch.
Bohemian Mesa
Czech-Style Pilsen Malt | Specialty Release
Arizona-grown, Bohemian-built. A proteolytically undermodified, fully cytolytically modified pale malt engineered for Czech-style decoction brewing — with the enzymatic reserves to carry an all-malt mash through three rests and still finish clean.
Padre Kino
Heritage White Sonora Wheat Malt | Heritage Release
Arizona-grown, Sonoran-rooted. A heritage soft white wheat malt revived from the Padre Eusebio Kino expeditions of 1685 — malted on-site for the modern brewer who wants distinctive nutty-sweet wheat character with full diastatic muscle.

Arizona-grown, kilned with intent. A modern 2-row barley pale ale malt kilned slightly higher than Pilsner to deliver the warm bread-crust and light honey backbone that British and American ale styles demand — with the diastatic strength to carry an all-malt grist or substantial adjunct load.

Pilsner Base Malt | Flagship
Arizona-grown, kilned light. A delicately kilned 2-row barley Pilsner malt built for the lager tradition — clean, neutral, and maximally fermentable, with the enzymatic muscle to support decoction or step mashing in classic Pilsner and Helles grists.
Distiller's Malt
High-DP Base Malt | Distillery Release
Arizona-grown. High-DP. Built to carry the still. A floor-malted 2-row Genie barley engineered for craft distillers running high-adjunct mash bills — 174 °L diastatic power, 207 mg/L FAN, and a clean, low-β-glucan wash profile give distillers the enzyme headroom to push corn, rye, wheat, or oat ratios further without compromising conversion or fermentation.

Dehulled Emmer Malt | Heritage Release
Arizona-grown, ancient-rooted. A dehulled emmer (Triticum dicoccum) pale malt revived from one of the oldest cultivated grains on earth — pre-dating modern bread wheat by millennia. Engineered to deliver nutty, grassy, distinctly emmer flavor in farmhouse, saison, and ancient-style brewing programs that demand a heritage signature.
Ute Moonstone
Raw Cracked Blue Maize | Native Heritage Release
Tribal-grown, indigo-hearted. An organic, non-GMO heritage blue maize cracked to a rough adjunct profile for craft distillers and brewers. Grown by the Ute Mountain Ute Tribe on the Towaoc, Colorado, reservation — anthocyanin-rich kernels carrying the deep indigo color and earthy-sweet maize signature that distinguishes blue corn from commodity #2 yellow.
